Ingredients 
- Spiced rum - 50ml
- Simple syrup - 15ml
- Angostura bitters - 10ml
- Lime juice - 25ml
- Mint - 1 handful
- Ice - 1 handful
Recipe 
- Start by adding the mint leaves and simple syrup into a Collins glass and gently muddle/stir.
- Add the rum, lime juice, and 2 dashes of bitters.
- Fill the glass with ice and stir with a bar spoon until the glass is cold and frosted.
- Add a little more ice bringing it to the top of the glass.
- Finish with the a few dashes of bitters, a little syrup and a sprig of mint.
Top Tips 
- Use demarara rum to recreate the original recipe.
- Crushed ice is preferable for this long drink.
- Demerara syrup is prefered to contribute to the deeper spiced taste of the drink.
- Keep the mint at the bottom of the drink to create the colour transition.
